Eric's Life Story begins from his childhood … always happy-go-lucky … always mischievous … always searching and striving for better. He was an adventurous soul who wanted to make a difference.
At age 9, he found the love of golf and became the first Freshman to play on the Varsity Golf Team at Asheville High. Later, he went on to conduct a Junior Clinic at Maggie Valley Golf Course where he assisted beginners to cultivate that love and precision as well. Further into this career, he became a golf professional at several prestigious golf courses in his hometown of Asheville, North Carolina.
He had the family "OCD" trait and began learning what Civil Engineering was in high school only to have his drawings chosen to remodel the School Office at Asheville High. He had the beginnings of a career in this – but this was not the adventure he desired! At the same time, he was working for the Ingles Market Chain where he eventually ended up in management – but his wandering spirit was not satisfied with this adventure either!
At the time he was a Golf Pro, we all thought he had settled into what he loves and was meant to do. Yes, he had the love for the sport, but, the desire to be a traveler. When he left to go on to what he predicted to be "bigger and better things" … his dear friend and Club Golf Pro, Larry Carter, told him "There'll be a job for you here when you want to come back" … 20 years or so later … Larry ran into him in his next and final career and said "I guess you're not coming back, huh?"
Along with his high-school buddy, John Abee, from Asheville, North Carolina, they began with a card table and canopy tarp selling various food products and eventually frozen drinks at local carnivals and festivals … soon to find out the delicious frozen drinks were the "key" to the future. Over the next 25+ years, a very prosperous and successful business evolved known as CocoBongos. Through long, hard hours of work and many miles of traveling all over the country, it became the adventure the established entrepreneur had longed for as a child.
During this life-long and fulfilling adventure, he met the love of his life, and eventually his wife, Lois Bittner Seastrunk. Together, they continued to pursue this dream. Through it all, there were many ups and some downs, all of which helped to cement the foundation to their financial future.
But many years before this accomplishment, he gave his heart, soul and life to the Lord, the most important foundation in any life. In years to come, he was a pillar in the community for assisting and supporting the less fortunate and underprivileged.
He is predeceased by his Father and Mother, Cliff L. Seastrunk, Jr. and Hazel King Seastrunk of Asheville, NC, and, his father-in-law, Harold Bittner of Evansville, IN. He is also survived by his loving wife, Lois of Port Orange, FL; his brother, Cliff L. Seastrunk, III (and Susan) of Raleigh, NC; his sister, Debra Seastrunk Sprinkle of Asheville, NC; his daughter, Erica Elizabeth Campbell (and Guy - grandsons: Bradley, Wyatt and Davis) of Black Mountain, NC; his mother-in-law, Wilma Bittner, and a multitude of in-laws in his Family of The Bittners, mostly of Evansville, IN; and many nieces and nephews from both sides. we wish you to keep in mind as we honor this kind, giving and loving soul … if you asked him "How are you doing?" … NO MATTER WHAT … his immediate reply was ALWAYS … "better than I deserve".

A Funeral Mass will be held at Our Lady of Lourdes Catholic Church in Daytona Beach on Saturday August 7, 2021 at 11:00am. Those unable to attend in person my follow the service live on Facebook under Eric's Celebration of Life.
