Palm Coast

Obituary

Eileen E. Parsons, of Palm Coast, Florida passed away on Sunday, April 11, 2021. She was 83.  Eileen was born September 3, 1937 in Brooklyn, New York, the daughter of Michael and Sara (Dobbins) Horan.

As a young woman, Eileen aspired to be a model, but was told she was "too tall."  She then turned her attention to art and perhaps to vent her frustrations, the Brooklyn Girls Roller Derby. All I can say is that her fighting spirit served her well throughout life.  She even developed a wicked elbow jab!  She remained active her whole life, going on cruises and even para sailing. She worked on and off for pleasure and eventually venturing out into her own business in jewelry and crafts. She was a fierce competitor in Mahjong and a lifelong volunteer and supporter of the Palm Coast library. Eileen was responsible for organizing and establishing the first Bazar of St. Mark by the Sea, which continues to this day. Later in life, she joined the Red Hat Ladies Society, but true to her independent spirit, wouldn't wear the hat (sorry ladies). Her many beautifully made blankets will only grow warmer with time.

She is survived by her brother, Michael Horan; her four children, Sharon, Paul, Carl and Steve Parsons and her many grandchildren and great grandchildren.

Eileen was preceded in death by her husband Carl Parsons and her parents.

No public services will be held for Eileen.  According to her wishes, Eileen's ashes will be buried with her husband in Staten Island New York.  Arrangements are under the direction and care of Lohman Funeral Home Palm Coast, 220 Palm Coast Pkwy SW, Palm Coast, Florida 32137 - (386) 449-1100.
